The perfect remedy for a gloomy day is a piping hot bowl of soup, Vietnamese noodle soup to be specific. I can never have it plain as served (pictured here) though the savory flavor of the broth suits others just fine. Fixings like plucked Chinese basil leaves, bunches of bean sprouts, fresh jalapeño for a spicy crunch, a squeeze of tangy lime juice, and all the seasonings like chili hot sauce for a spicy kick and sugar to balance the salty broth liven up my soup. If I'm having Spring Rolls I'll add a dollop of the peanut dipping sauce for a nutty flavor. Uhm...just yum-yum!!!
Last year John and I went to Death Valley National Park for the day. If you've never been, I highly recommend a visit and you'll need more than a day to explore the land of extremes.
This year I chose to stay home on the bike trainer while he went on a New Year's Day ride. Nearly 100 people showed up for the 65-mile round trip route from the Starbucks on Green Valley which turned around at Callville Bay Marina. Perhaps this time next year, I'll be seasoned enough to join in.
Since we didn't get to spend much of the new year's day together, he's going to take me on an adventure tomorrow. Looking forward to it!
