Simple Dinner for Sunday

  • Grilled chicken (shredded)
  • Green cabbage (shredded)
  • Red cabbage (shredded)
  • Tomatoes (diced)
  • Cilantro (chopped)
  • Onions - white and green (sliced or diced)
  • Black olives (sliced)
  • Lime (wedges)
  • Salsa (hot)
  • Cheddar cheese (shredded)
  • Hot pepper cheese (shredded)
  • Tabasco
  • Corn tortillas (grilled or warmed)

The cabbage adds a nice crunch to the taco.  I use to use shredded romaine lettuce until we had some at Taco Loco on our 7th day in Cabo.

One of the best things about making tacos, I like that I can dump all of the ingredients in a bowl the next day to make salad for lunch.
