Grilled Shrimp with Avocado and Cumin-Lime Dressing

Our weekend tradition following a long ride is to have a big lunch (whether we go out or dine in), watch an afternoon movie on NetFlix, and then take a nap.

Upon arriving home, we caught up with the Vuelta a EspaƱa.  After watching the riders climb an extremely steep (real) hill today, I won't complain about going up Horizon Ridge anymore (not publicly anyway, LOL).

Then we started on making lunch.  This recipe serves 4 people (only 266 calories, 11g. mostly good fat, 24g pure protein, 24g healthy carbs, 6g fiber, calcium and iron in each serving makes this one of my favorite salads).

Grilled Shrimp Salad with Avocado
3/4 pound peeled and deveined large shrimp
1 teaspoon chili powder
2 ears corn
1 clove of garlic, minced (optional)
2 ears corn
5 cups chopped romaine lettuce
1 cup spinach
2 large tomatoes, cut in wedges
Cumin-Lime Dressing
1 cup diced peeled avocado
kosher salt & pepper

1. Prepare grill.
2. Remove husk from corn; scrub silks on corn. Place corn on a grill rack. Grill corn 3 minutes, turning half way. I like the corn with parts still raw but you can cook the corn longer.
3. Sprinkle shrimp evenly with chili powder and toss with garlic, pinch of kosher salt and freshly ground pepper. Put on skewers and grill for 3 minutes. I try not to overcook shrimp but cook it longer if you like shrimp well done.
4. Cut kernels from corn in to a salad bowl and combine shrimp, lettuce, tomato. Drizzle with Cumin Lime Dressing (reserving a few tablespoons) and toss well. Add avocado and spinach; gently toss and drizzle the last of the dressing. Serve immediately.

Cumin-Lime Dressing
1/4 cup fresh lime juice
1 tablespoon canola oil
1 tablespoon honey
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/8 teaspoon coarsely ground black pepper

Then John queued up "Fast Times at Ridgemont High" from Netflix.  I see why he likes the movie, LOL.  Sex, boobs, and blow-jobs = dude tube.  I watched several minutes of it until we finished lunch.  Then I went for the shower. 

"Do you want me to pause it, hon?" he asked.

"No, no." I replied nonchalantly. "In fact, you can forward it a bit while I shower."
