Diced Tomatoes and Bacon Breakfast

I will be the first to tell you I don't like warm fresh tomatoes but piping hot diced tomatoes (from the can) sprinkled with shredded cheddar cheese and crushed black pepper is just delicious with a side of crispy bacon and toasted bread. YUM-YUM!! A recipe I picked up from our grandma and I love it because it's so flavorful without much seasoning or added salt. Be careful when taking the casserole dish out of the oven.

All you need is:
  • diced tomatoes from the can (pour in a casserole dish draining some of the juice; heat up to 400 degrees until bubbly hot)
  • shredded cheddar cheese (enough to cover the top after the tomatoes are heated)
  • bacon (we like thick cut; cooked separately and can be broken up into pieces to add to casserole)
  • bread, toasted (a whole loaf from Costco or something you like)
