Phở is basically a bowl of white rice noodles in clear beef broth with thin cuts of beef (steak, fatty flank, lean flank, brisket) and meatballs. I like to add the extra stuff: tendon and tripe because I'm just a disgusting Asian girl.
We garnished our soups with green onions, white onions, cilantro, Thai basil, lime juice, bean sprouts, and jalapeños. Then we added sauces such as hoisin sauce, fish sauce, the Thai hot sauce Sriracha, and sugar (not generally added but it adds a little sweetness to the savory flavors).
The restaurant underwent some nice interior changes from the last time we visited the restaurant. (Whenever we are in the area, Phở Kim Long is a required stop.) They replaced their seafood tank with a fish tank which was nicer view than the lobsters in their tanks begging, "Puhleeze, don't pick me!!".
Before we headed for home, we swung by the old subdivision to visit our first house. The area has tremendously developed; it was almost unrecognizable! Driving on the streets nearby with the increased traffic made me feel very claustrophobic like the homes where we use to live built neatly next to each other with a non-existing 12'x25' backyard...LOL! It was perfect for us then because we didn't spend a lot of time at home, let alone in the lap pool we managed to fit back there.
Another week to go and then I'll be off from work for a good stretch to enjoy the holidays. I am really looking forward to the break.
